Albacore Tuna Cakes with salad and lemon

Albacore / Salmon / Chicken Cakes – Or Try It Stir Fried

My friend Danna shared this recipe with me a while back. She cooks occasionally for the office and this is a recipe handed down through her family that she has tweaked to be more healthy. The original recipe consisted of egg, flour and tuna or salmon. Although is was a yummy comfort food, she decided to lighten up on the flour, use an egg substitute and incorporate a more veggie base with the fish. It is delicious!

Albacore / Salmon / Chicken Cakes

Ingredients:

3 Cans Albacore or Salmon In Water (appx 7 oz. each) OR 2 Large Chicken Breasts Chopped Well
1 Cup Trader Joe’s Miropoix (Onion, Carrot, Celery Mix) – Pulsed finely (Obviously you can chop up your own)
1 Pinch Salt
1 Tbsp Black Pepper
¼ C Almond Flour
1 C Trader Joe’s Egg Substitute
Additional Add In Items: Fresh Jalapenos, Bell Pepper, Cilantro, Spinach, etc. Basically and vegetable you enjoy could be diced and pulsed with the filler mix to enhance the flavor and nutrition benefit.

Cake Preparation:
Put veggies in food processor/chopper. Pulsed vegetables should be a grated consistency. In a large bowl add the vegetables, albacore/salmon or chopped chicken, salt, pepper, egg substitute and almond flour. Mix with a spoon well. Use a ½ cup measuring spoon/cup to dip out perfect portions onto a piece of wax paper. Use a spatula to flatten them slightly (see photo). Chill in the fridge for approximately 30 minutes. Chilling will help them keep their shape during the cooking process. Prepare a large non-stick skillet with olive oil covering the entire bottom of the pan. Once the pan has reached a nice heat, slide the cakes from the wax paper to the pan. Flip the cakes when you see the edges turn golden brown.

Alternative Preparation:
Lightly coat the bottom of the pan with olive oil. Do not portion the mixture. Spoon the entire mixture into the heated non-stick skillet and press the entire mixture against the bottom of the pan. Once it starts crisping and turning golden brown, flip portions. Remove when all the mixture is heated and has many crispy bits. Serve in lettuce cups like tacos. Bon Apetit!

Suggested Sides: Baked sweet potato fries, arugula salad, cauliflower rice or roasted veggies.

Serve with your favorite condiments: Organic Ketchup, Salsa, Tartar Sauce, Lemon Dressing, Louisiana Hot Sauce or just squeeze a fresh lemon on top!
