Delicioso Crock-Pot® fiesta pollo taco!
Several months ago I discovered a full proof, super easy way of preparing a Mexican inspired chicken dish. Crock-Pot® Fiesta Chicken has become a staple in my household. It’s super simple and everyone loves it. You can use the final dish in many different ways including tacos, enchiladas and salads. Make future meal prep super easy by making a double-batch and freezing half!
You will definitely want to add this one to your meal rotation!
Crock-Pot® Fiesta Chicken
1 16 oz. jar of ready made salsa (24 oz. Del Real Foods Salsa de Molcajeta Roja Fire Roasted Salsa – YUMMY)
4 Large chicken breasts
1/2 cup cilantro
1 Crock Pot
Place chicken breasts and salsa in the Crock-Pot® together. Cook on Low for 3-4 hours. Remove chicken from Crock-Pot® and shred the chicken. Use half of the liquid from the Crock-Pot® to moisten the chicken. Add cilantro for color and a bit of flavor. Serve immediately.
Side Note: Are you serving your chicken with a side of Mexican Rice? Use the remaining liquid from the chicken to cook your rice in. Delish!
